(sorry for trolling this lol) I love rice soups... but being from the upper midwest, we get alot of "wild" rice - makes some really tasty soups... actually just made one for Thanksgiving... a butternut squash wildrice and smoked sausage soup Smiley yum

I've been on a health drive recently, and here's something I came up with. It makes about 10 servings (190 calories each) and tastes wonderful. Freezes well too.

340g (6 ounce) cooked diced chicken breast
630g (3 cups) cooked plain rice
3 x 415g (14 1/2 ounce) cans of chicken broth
340g (12 ounce) whole kernel corn
115g (4 ounce) diced green chillies
500ml (17 1/2 ounce) V8 vegetable juice
80g (1/2 cup) chopped green (spring) onions
350g (1 1/2 cups) salsa
2 tablespoons coriander (cilantro)

Method:

Stick it all in a big pot, bring to the boil, then simmer for 15 minutes.
